There are some texts that I can't find or edit...

On the profile page, I would like to change the text of the "upload new picture" button.
Always on the same page, the categories of the type of seller. Here "utilisateur" in "particulier" and "entreprise" in "professionnel".

On the page to post an ad, I would like to edit the text "Drop files here to upload" in the photo box.

"Drop files here to upload" is probably in JS directly.
For others, try to simply upload PO file from source code (when you download all into desktop).
