i seen only admin can change status of product. why not seller  in user dashboard  ?
and bank transfer is accept by admin, why not Seller in user dashboard  ?

Because one order can contain products from multiple seller, therefore seller cannot update status, only admin can.

i think it is the best way to allow seller set order status when buyer order real product  because they don't need to contact admin when product is shipped or Completed

You still do not understand. If order contains 2 products from 2 different authors, and one mark order as completed, should it really be complited? second product might not even have been shipped.
We have on plan to split orders to order products and define status for each product in order.
