All settings related to mail server are in Settings > Mail server. If you've not changed admin email to new, it's not problem of mail server.

Yes, I found the same thing. Had to edit the database xml file manually as the mail server was saying messages were being sent but they were going to an old test account that I wasn't then monitoring
