how to stop forcing the category to be chosen?, to disable it

Hello there...

im gonna to make page with no categoris, just direct items, i need to stop the categories options, but i cant know how!, can anyone help me to tell me how to do it?,

Category is required, so probably best way is to create just 1, select it everywhere as default and hide it when needed.
