Hi,
after changing jQuery Version to 3.x.x PageSpeed ​​Insights informs that there are still security holes

Suppose those are "low" security holes.
jQuery libraries (v3.x) are going to be updated in v8.0.3, meanwhile you can update them manually in oc-includes/assets or not use them at all (jquery UI).

upload newer versions or remove these scripts or replace with empty JS file.

Just .js onejust clean it, removal will rewuire more actions (or why not directly replace it with latest jquery ui content?)
Cleaning file may require removing jquery ui functions in core, theme or plugins if they use it
