do I have to replace the zara folder on my > oc-content>themes>zara with the new update? will my settings stay the same? I'm just scared to replace the folder as I already done lots of editing.

if you replace theme files, it has no impact on (correct) translation or any kind of settings, but will wipe all modifications made to theme files.

how will I update my theme and keep my modification the same.

You must use child theme functionality.
